Finger Lakes Coq Au Vin

INGREDIENTS

  • 4 skin on, bone-in chicken breasts or thighs (approx. 2 lbs.)
  • Kosher salt
  • Freshly ground pepper
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, chopped
  • 16 ounces mushrooms, sliced
  • 2 cups Finger Lakes Dry Riesling wine
  • 1 cup heavy cream (not whipping)
  • 2 tablespoons Dijon mustard
  • 3/4 cup grated parmesan cheese
  • 4 sprigs fresh thyme, or ½ tsp dried

DIRECTIONS

Preheat oven to 400 degrees F.

INGREDIENTS

  • 2 large bunches fresh collard greens (or one 16 oz. bag)
  • 4 slices bacon, cut in 1” pieces
  • 1 tablespoon olive or canola oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1½ teaspoons paprika
  • Pinch red pepper flakes
  • ¼ teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • 2 cups low-sodium chicken or vegetable broth
  • 1 cup aromatic white Finger Lakes wine - Riesling or Gewürztraminer
  • ¼ cup apple cider vinegar
